The Pheasant’s Tears winery – named after the Georgian saying “only a wine beyond measure could make a pheasant cry tears of joy” – produces Kakhetian appellation wines in an ultra-traditional manner. Grape skins, pips, stems, and juice are left to ferment in Qvevri (a large clay jar buried underground) for six months. The result is a natural wine with low levels of sulphur.
Shavkapito is a rare Georgian grape variety known for producing vibrant, earthy, and naturally tannic wines, with clean notes of violets and black forest fruits. Pheasant’s Tears works exclusively with Qvevri – no oak is used in their wines – to allow the quality of the fruit to shine through. 750ml Bottle
