Through every iteration of our growth over the last demi-decade, one thing that has persisted throughout is this brewery’s love of hops, and how we’ve born an entire business that now looks after the livelihoods of fourteen team members from this love. The Hop Studio felt like a natural extension of this love – showcasing the single most complex, wonderfully diverse ingredient we use in our process bar none. The Hop Breeding Company of the United States is where experimental hops are born and mulled over for years prior to release; with famous alumni HBC 438 becoming Sabro, and HBC 369 going on to become Polly’s stalwart Mosaic. HBC 630 has been a long favourite here at Polly’s; a descendent of Warrior, and specifically bred since its first introduction in 2008 thanks to its incredibly high fruit aromas and flavour compounds. We’re talking fresh cut strawberries with cream, sweet cherry, raspberries, and candied oranges.
