JOSEPHINE Cremant de Limoux Les Hautes Terres NV, organic Champagne alternative from a fantastic little winery in the gorgeous area of Limoux in the Languedoc.  Terres Blanches make super white and sparkling wines but not in the traditional ‘Blanquette’ sweet style which is well known in Limoux.  His Cremant is ‘Methode Champenoise meaning a base wine is made before the addition of ‘Liqueur de Tirage’, a blend of yeast and sugar to kick the second fermentation in the bottle.  Once finished, the wine rests on the less – dead yeast cells – for 18 months before bottling.  It is stunning sparkling wine, so delicate and drinkable yet with underlying autolytic richness, subtle brioche and cream notes and ripe orchard fruits.  Stunning and great value for money.
