Atlantic Dry Mead – Sauternes Barrel Aged (12% ABV) is the second in our wine barrel-aged series, a gorgeous 3-year-old traditional mead fermented from orange blossom honey, matured for the last 12 months in a French oak wine barrel to add intriguing structure and depth. A fine, unique mead with lingering almond and refreshing citrus notes. Enticing with a bright, clean finish and a lovely balance of sweetness and acidity. As seen on celebrity chef, John Torode’s Ireland on the Food Network.
An initial burst of honey, very refreshing, followed by the subtle amaretto and florals such as honeysuckle and white acacia flowers. A lovely subtle vanilla and spice finish lingers. Like summertime on the Mediterranean coast. Enjoy this delicious mead chilled.
All bottles hand numbered and signed. Naturally Gluten Free.
Desserts such almond or lemon tart, posset or cheesecake pair well. For savoury pairings consider Durrus or Gubbeen cheeses or a herb-roasted chicken dish.
Store the bottles similar to wine, upright in a cool place away from direct sunlight and they should keep for at least two years. Once opened, store the bottles upright in the fridge. If you have one of those vacuum pump wine bottle closures that pump out the oxygen, all the better. After that the flavour starts to change a little as the air gets to it. Good to drink still or use in cocktails or cooking.
The Atlantic Dry Mead starts to change in flavour after 7 days. The Wild Red Mead and the Hazy Summer Mead are fine for 2 weeks as there are more natural preservatives from the skins. Then they become more port-like.
The Wildflower Mead keeps longer than the others as it’s semi-sweet. Up to 4 weeks if there’s any left by then. Similar for the Barrel Aged and Cask Aged Meads.
