Blackberries, strawberries, raspberries, bilberries and black and red currants.
Same doofusly treatment as the other "Doofuses" with caramelized honey and extra dark maple syrup, but taken a step further by aging it for 22 months in freshly emptied Buffalo Trace bourbon barrels.
Compared to the original, this version uses a local polyfloral honey that takes up more space in the flavor profile after being caramelized. It has a more robust dark caramel flavor, bringing the honey more to the foreground, but still melding well together with the jammy wildberries, vanilla and maple notes. Sweet, but all kept in check by a firm acidity and the long aging in wood.
